Not all children love pumpkin pie, but this Thanksgiving they will love to gobble down these fun and delicious turkey cupcakes. This is a great cupcake recipe that will help to keep the children occupied while your real turkey roasts in the oven.
To make Thanksgiving Day easier, prepare the actual cupcakes a day or two in advance. You can even bake them a week before and freeze them in anticipation of the big day. You can also make the cupcakes from scratch, but my children prefer the standard boxed chocolate mix. If you have vanilla lovers in the house, white or yellow cake mix will do just as well.
Place a plastic table cloth on the kitchen table and spread out your ingredients. Use tubs of chocolate icing, your choice of utensil for spreading and a hand towel for each little chef. Place small bowls on the table filled with miniature peanut butter cups or hershey’s kisses, candy corn, small tubes of black gel icing and white chocolate chips.
A handy tip for those with younger children? Place a bowl of warm water in the middle of the table. When the kids get a little too covered with icing they can dip in their fingers and use hand towels for a quick cleaning during decoration.
Spread the frosting on each cupcake. Then place a peanut butter cup upside down on the frosting. Cover the peanut butter cup with its own thick layer of frosting. Place two of the white chocolate chips “pointy side in” for the turkey’s eyes. The black gel can then be used to finish off the eyes on the white chocolate chips.
If you are using Hershey’s Kisses instead of peanut butter cups, tilt them on top of the cupcakes with the tip pushed slightly into the cake. Use icing to glue the white chocolate chip eyes in place. The turkey bodies can also be made from ginger snaps, which create an additional holiday feel with the rich holiday flavor. If the eyes do not stay in place, use a thick sugar glue with confectioner’s sugar and water.
Candy corn can now be added for turkey tail feathers and the beak, making these turkey cupcakes something to be proud of! We make these every year and every year our turkeys look a little different depending on the decorating whims of the kids. These cupcakes are a wonderful craft to use during holiday birthday parties, girl scout meetings and school celebrations too!
